Njahe Recipe

Njahe
Njahe is a Swahili name for another type of beans. Njahe is usually eaten in Kenya at lunch time as a form of stew to accompanying food like rice, bread etc.

Ingredients

  1. 1 chopped onion
  2. 1 cup boiled Njahe
  3. 2 chopped tomatoes
  4. 1 ½ table spoon turmeric
  5. 1 table spoon powder
  6. 1 table spoon chopped cilantro
  7. 1 ½ cup coconut milk
  8. 2 table spoon oil
  9. Salt

Steps to follow

  1. Heat the oil in a cooking pot.
  2. Cook the onion gently until it turns light brown.
  3. Partially mash the boiled Njahe with a cooking stick.
  4. Add onion, tomatoes and mix well.
  5. Put the turmeric and seasoning and half the cilantro.
  6. Pour the coconut milk and stir to blend the ingredients.
  7. Cover the pot and leave to simmer for 10 minutes before garnishing with the remaining cilantro.
  8. Serve with rice or Chapati.
