Maharagwe Recipe

Preparing Maharagwe

Maharagwe is a Swahili name for beans. Maharagwe is usually eaten in Kenya at lunch time as a form of stew to accompanying food like rice, bread etc.

Ingredients

  1. 1 chopped onion
  2. 1 cup boiled beans
  3. 2 chopped tomatoes
  4. 1 ½ table spoon turmeric
  5. 1 table spoon powder
  6. 1 table spoon chopped cilantro
  7. 1 ½ cup coconut milk
  8. 2 table spoon oil
  9. Salt

Steps to follow

  1. Heat the oil in a cooking pot.
  2. Cook the onion gently until it turns light brown.
  3. Partially mash the boiled beans with a cooking stick.
  4. Add onion, tomatoes and mix well.
  5. Put the turmeric and seasoning and half the cilantro.
  6. Pour the coconut milk, stirring to blend all the ingredients.
  7. Cover the pot and leave to simmer for 10 minutes before garnishing with the remaining cilantro.
  8. Serve with rice.
